Best (and easiest) Chicken Pot Pie ever!!


Once of the perks of having a baby, other than the obvious (sweet snuggles, smell of a baby’s wee little head, their little fingers gripping yours, etc)…and not so obvious (namely not being pregnant anymore)…is that people bring you food!! Lots and lots of already cooked, sometimes still hot, delicious free food! Actually, to be honest, the whole people-are-going-to-be-bringing-me-food/I-won’t-have-to-cook for a few weeks routine is something I start thinking about somewhere in the first few weeks of my first trimester! I like food ok! Especially free food 🙂

Anyway…when our first little bundle of joy joined the family, a sweet friend brought us a meal that has since been a family favorite! It is the absolute easiest chicken pot pie you will ever make! EVER!

5 Ingredients. That’s it! 5!

A cup of milk
2 or 3 chicken breasts
A half a bag of frozen veggies
A can of Cream of Potato soup (I tried to omit this and just add cut up potatoes…not the same!)
Ready made, roll it out, pie crust (sure you could make your own..but this is way easier!!)


Ok here you go…
Preheat the oven to 375 degrees. Cook the chicken. While the chicken is cooking…in a bowl mix the milk (1 cup), the half a bag of frozen veggies, the can of potato soup, and a dash or so of salt and pepper (optional). When the chicken is done…cut it up and add it to the mixture. Pour the mixture in a round pie pan or an 8 x 8 brownie pan…whichever is clean 🙂 Roll the pie crust on top, add a few slices to the top of the crust and bake for 30-45 min! Done and Done!


I like to serve mine with a salad and some fruit! The only thing bad about this recipe is there are never any leftovers, and if there is anything I like more than free food, it’s leftovers! 🙂 Maybe I should just start making two! 🙂

    Made this for lunch today. So easy and so yummy. I did put one crust on the bottom and one on top. Took closer to an hour. I will make again!
