Brilliant Brunch Bar

We love breakfast around here…LOVE it! We do breakfast for dinner just about once a week and we have waffles every morning! They make the house smell amazing, fill us up more than just cereal, and they’re healthy! So when I was thinking “What are we going to do for Father’s Day this year” A light bulb went off…BRUNCH..Duh! Of course we will have brunch! Bacon, eggs to order, hash browns, the whole nine yards! But how can I also have healthy options and make it a little easier on myself? Easy….Chick-fil-A! haha. That should really just be the answer for everything!

Of course we will still have the breakfast essentials of meat and eggs, but we can also have a huge tray of fruit and use it to top all our breakfast favorites! Our Brilliant Brunch Bar was born!

If you are thinking of hosting a Father’s Day Brunch(or graduation party, or baby/wedding shower, or any kind of party) Give yourself a break and pick up a fruit tray from Chick-fil-A (call to order, the just pull up to the catering parking spot and they bring it out!)

Use it to top yogurt!
I use low-fat plain yogurt, but vanilla would be great too (just watch out for added sugar)

Oatmeal –
I get the minute kind to just get it done quick, but steel cut oats are also great!

and of course…my whole wheat,flax seed waffles!

Here’s what you need…

  • 2 large eggs (I use 1 tbsp of flax seed and 3 tbsp of water instead of 1 egg, the directions on how to substitute for an egg are on the back of the flax seed package)
  • 2 cups of whole wheat flour
  • 1 or 2 Tablespoons of cinnamon
  • 1 ¾ cups of milk (add more to make it thinner)
  • ½ cup of refined oil (I use canola or coconut)
  • 4 tsp of baking powder (I find that I only need 7 tsp when I quadruple the recipe)
  • ¼ tsp of salt
  • Here’s what you do…
    Mix all the ingredients together, add a 1/3 of a cup (or so) into a heated waffle iron (I use this one) Heat until the green light comes on, take it out and serve with real maple syrup or top with fruit from your Chick-fil-A catering order! 🙂

    The fruit tray can also come with this amazing caramel sauce that your guests can drizzle on top of their plates…so so yummy! Order one…you know you want to! Just look at how refreshing and delicious that is! 🙂

      What a great idea. I hate chopping and cleaning fruit for fruit salad. Catering trays are a fab idea and we have some leftover fruit from one in the fridge right now that I couldn’t figure out what to do with! We love breakfast food too so I really love the idea of a brunch bar. I think a brunch bar is in order tonight!

      I love the variety you have highlighted and how fruit can be enjoyed many different ways. I also think Chick-fil-A’s fruit tray is tasty and enjoyable and would be perfect to have around
