Coconutty Whole Wheat Flax Seed Pancakes

These beautys are a regular in our house! I love them , the kids love them, they don’t take too long to whip up and they are super healthy! You can use eggs instead of flax seed, but I find the flax seed is cheaper and it adds fiber…which keeps them, and me, full longer!

Whole Wheat pancakes that are egg free!

What you need

2 TB flax seed

2 cups whole wheat flour

1/2 tsp salt

4 tsp baking powder

2 TB coconut oil (This is my favorite kind – Spectrum Naturals – Organic Coconut Oil)

1 1/2 -2 cups of milk

What you do

Put flax seed in mixing bowl and add 6 TB of water. You are “supposed” to let that sit for 5 min. but I just add the flour on top. Cause “ain’t nobody got time for that!” hehe

Then add the rest of the ingredients in order. Mix. If it seems a bit dry, add some milk until it is the consistency that you like.

Scoop about 1/4-1/3 cup on to a griddle (I use this one because I don’t have to oil it!) I can usually fit 4-6 on at a time. Let them cook for about 4 min then flip and let them cook on the other side.

Whole Wheat Pancakes

You can add more yummy add-ons if you wish. We like to add cocoa powder to make “Coco-nutty Chocolate whole wheat flax seed pancakes”. haha…quite a mouthful!
