Easy Corn Dogs (Mini style!)


I have seen a few corn dog recipes on good ‘ole pinterest lately, and I thought I would give them a whirl! I changed it up a bit and love how they turned out! Instead of using the hot dog whole, I cut them in thirds and made mini corn dogs! So yummy!



What you need:
A pack of 8 hot dogs, cut each one in thirds (I get organic all beef)
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
a dash of salt and pepper
1⁄8 cup white sugar
2 tsp baking powder
1 egg
1/2 cup milk
oil, for frying – Vegetable or coconut

What you do:
Mix the dry ingredients.
Add oil to a frying pan, about 2 inches, and heat on medium/high heat.
Add egg and milk to dry ingredients.
Wait for oil to get hot.
Dip a hotdog piece into batter so it’s covered (this part can get a bit messy :))
Place into frying pan of hot oil. Let sit until side is golden brown (about 3 min.) then turn and repeat on other side)

I usually dip and fry about 5 pieces at a time. You want to leave some room so you can turn the pieces.

    They were so yummy! We all loved them. The only thing was that the corn mixture didn’t evenly coat the dogs and mostly ended up on one side and some dogs slipped out while cooking, I’m sure with more tries I could get it to coat evenly. Thank you! 🙂

      I had that problem the first time…I kinda just played around with them a bit. Hope it works better next time! Also…you can put some in a muffin tin and put a hot dog in the middle and bake.
