In the past few years I have noticed that my very best friend, the one who kept me trim and fit, the one who would let me eat all day..whatever I wanted..without a care in the world and not gain a pound. She has been slowly distancing herself from me…oh yea…my metabolism. She used to be so fast and efficient…but now…sadly she is slow and lazy! I think, actually, that she might be dead.
As a result, her sister…energy, has also slowed down, probably out of sheer sadness over the loss of metabolism.
Just to rub salt in the wound, they decided to do this all around the time I turned 30. Happy Birthday to me.
As a result, my pants don’t fit and I just want to nap all the time. Thanks a lot ladies! I thought we were friends!!
Oh the joys of getting older. New little lines appear on my face and hands every day. And the ability to eat whatever I want and still fit nicely into my jeans…fading.
So what’s a girl to do…well this girl fights back! bwhaha
After trying a few different lifestyle changes, I finally found one that I could live with and even enjoy! I may not be able to eat a whole box of mac and cheese in one sitting anymore, but I feel better, healthier and have more energy! So take that metabolism!
Basically…I hope you’re sitting down, because this will blow your mind…I have stopped eating crap! haha
Well..not actual crap…because I never had a crap eating problem…but processed crap. I had a huge processed crap problem! Sugars, bread, carbs, HFCS, sweets, etc…etc…etc. I have cut back on filling my body with processed foods and drinks and BAM…lost weight, gained energy and I feel awesome!
The first few weeks were hard…like don’t be around me I am in sugar withdrawal hard!! Headaches, moodiness, anger…kinda like the stages of grief. Sugar and I had to break up…it was getting bad…real bad.
So now, I am low carb, very low sugar, low processed foods, high lean proteins and tons of veggies! Basically, I try to be aware of what I am eating and why I am eating. Am I hungry or just bored? I still allow myself a treat, sometimes even once a day…because that’s realistic for me to keep it up long-term. I try to fuel my body to give me the best results! I call it the Thoughtful Eating Diet.
I gotta say, this diet is pretty delicious too! I eat cali-mac instead of mac and cheese, raw veggies for a delicious crunch, and I make flax-seed waffles for breakfast or to use as sandwich bread.
Yeah…I know…they look amazing!! Notice the chocolate chips and syrup…I know they are sugary…that’s why I only use a little…and when I eat these for breakfast, well..that’s my treat for the day.
To make these beauties you need…
2 cups Ground Flax seed
1 table spoon Baking powder
1/2 teaspoon sea salt
1/2 cup water
1/3 cup oil (I use coconut)
optional – Spices…I have used cinnamon, nutmeg, and ginger to make them Fall-ish.
What you do…
Mix the dry ingredients. Blend the wet ingredients. Mix dry and wet together. Cook on waffle iron. BAM! Grain-free, Gluten Free, full of protein and fiber…Flax seed waffles!

Mix the flax-seed, baking powder and salt in a bowl. In a blender, blend eggs, water, and oil (if using coconut make sure it’s in a liquid state). Blend for 30 sec. or until frothy.
Mix wet ingredients with dry, add spices if you like!
Plop about 1/4 cup on the waffle iron, close and wait for the green light!
