Greek Yogurt Pancakes (plus $25 Giveaway)

I’m always looking for ways to keep the kids, and myself, fuller longer, and starting off with a breakfast high in protein is key. Thankfully, I have found a few fun recipes that the kids seem to enjoy! The latest recipe being these Greek Yogurt Pancakes.

Greek Yogurt Pancakes, high protein start to the day!

What you need
2 tablespoons ground flax-seed
6 tablespoons of water
1 1/2 cups Whole wheat flour
2 teaspoons of aluminum free baking powder
1/2 teaspoon salt
2 tablespoons of oil (Coconut or canola)
1 teaspoon of vanilla
3/4 cup plain or vanilla greek yogurt
3/4 cup milk
Optional toppings – fresh fruit, shredded coconut, maple syrup, powdered sugar

What you do
Start by soaking the Flax seed in the water in a large mixing bowl. I use this instead of eggs! It’s cheaper and healthy! It says to soak for 10 min…but I never do. Bwhaha! My flax-seed/water soak is at long as it takes me to get the rest of the ingredients! Breakin’ all the rules!

Anyway…then…pre-heat your griddle to medium heat, 325.

Add the oil, vanilla and greek yogurt to the flax-seed bowl. In a separate mixing bowl, mix all the dry ingredients together. Then add the dry ingredients to the wet ingredients and mix. Stir in the milk until all ingredients are combined. Don’t over mix, there should be a few lumps.

Grease the griddle if needed. I never grease mine, but if you have a sticky one…grease it. Pour about 1/4 cup of batter onto the griddle. Allow to cook for about 2 min. of until the edges look dry and bubbles form in the batter. Flip and cook for another min on the other side.

    This recipe sounds yummy! I will have to try it!

    I save money on groceries by planning monthly and doing a large shopping trip on one day to Jungle Jim’s, Walmart for personal care items, Sam’s and then Kroger for the sales. I have to stop and buy milk, eggs and produce sometimes but I save money with a plan and by staying out of stores during the month.

    I save on groceries by going to multiple stores. I go to Trader Joe’s, Aldi, Kroger, and Rempke! Each places has low prices on certain things. I use manufactuer’s coupons at either Kroger or Rempke and I get low priced specialty Gluten Free foods at the others. I also have some random favorites at each such as the pomegranate seeds at Trader Joe’s. Rempke also has a lot of Gluten Free stuff – they have the best Gfree ice cream!
