A few years ago a friend, who spent some time living in Belize, came over and taught me how to make my own tortillas. They are so easy and so much better than store bought, and cheaper too! Bonus! My husband LOVES them, and so do the chicks! So thanks…you know who you are…for teaching me! 🙂 Actually, the same friend also taught me how to make naan, which now we have about once a week because it is AWESOME!
It only take five ingredients (more five ingredient dinners here) and a few simple steps. I usually make a double batch (20 or so) and use them all week, or until we run out. It is a very forgiving recipe, so it is real hard to mess up! My friend showed me using white flour, but I use whole wheat and even add flax seed and some spices (this time I also added red pepper flakes) and it works just great! I have even used coconut oil, but this time I was out and had to use canola.
Here is what you need…
2 1/2 cups flour
1 tsp salt
2 tsp baking powder
1/3 cup oil
approx 1- 1 1/2 cup hot water
Pinch off balls, keep in mind the bigger the ball the bigger the tortilla, I usually make them about golf ball size.
Now the are “supposed” to let them “rest” for a bit, but I never do, hehehe. At this point heat up the griddle or pan or whatever you are using and maybe take this time to put all the ingredients back and wipe up a little.
Then roll them out and cook them on a griddle (this is my favorite one), about 30 sec to a minute
Add your toppings and enjoy!!
For some reason I am terrible at making my tortillas beautiful round perfect circles. Oh well, they still work great! Enjoy!
