Vanilla Coconut Granola

With a title like “Vanilla Coconut Granola” my mouth starts watering immediately! And just wait until you see the rest of the ingredients! It’s like summer and Christmas rolled into one delicious breakfast…or snack!

Now…full disclousure…I haven’t made this yet πŸ™‚ Actually, my sweet sister-in-law texted me the pic and the recipe! She knows her stuff so I know this is going to rock! Plus…I wanted to get it to all you guys ASAP πŸ™‚


What you need
6 Cups old fashioned oats
1 cup coconut
3/4 cup whole wheat flour
pinch of salt
2 TBS cinnamon
1/2 Cup water
1/2 Cup coconut oils (melted)
1 Cup honey
3/4 Cup raisins (I omit this)
1 Cup nuts (optional)
Go ahead and throw in whatever else you like in granola! πŸ™‚

What you do
Pre-Heat Oven to 225 degrees. In large bowl combine oats, coconut, flour, salt and cinnamon. In a small bowl combine oil, honey, water and vanilla. Mix wet ingredients with dry ingredients and mix until well combined. Spread on baking sheet and bake for 1.5 hours mixing every 20 min.

I am making Vanilla Coconut Granola this week! Serve with milk or on top of plain yogurt for a delicious breakfast or afternoon snack!

    I like the idea of Vanilla Coconut Granola. Not as cereal but thinking more for my topping on yogurt or even just to munch on instead of grabbing chips or pretzels or something.

    I have some great local honey that would taste great in this recipe I bet!

    This sounds delicious! Coconut and vanilla are 2 of my fave flavors and my brother’s bees make the best honey and I am always looking for more ways to use it.
