My boys, and girl actually, can eat. And eat and eat and eat! They are so young still and can go through a box of cereal a day! I am not looking forward to teenage years! They are going to have to get a job just to help with the food budget 🙂
They are also early risers, usually up and eating breakfast by 7:30am. They do go to bed at 7:30-8 pm so I guess I can’t complain. But by 9:30am they are ready for snack #1 of the day! It is killing me! I know I have to give them a more filling breakfast than just cereal, even if it gets me 30 min. of more sleep (the oldest can pour everything himself and his siblings! 🙂 So every week I usually make a quadruple batch of whole wheat waffles! They are so yummy! I even add flax seed for some added fiber! I make them big enough to fit in the toaster and just pop em in throughout the week, well at least for a couple days. They go pretty fast. A heartier breakfast does keep them full a little longer, on waffle days snack time is pushed back to 10:30, sometimes even 11:00! 🙂
Here is the recipe that I follow, I omit the eggs and add a mixture of flax seed and water instead! Mainly because eggs are expensive and adding the flax makes it a bit healthier! I also don’t add sugar, I figured the maple syrup on top makes them sweet enough!
- 2 large eggs (I use 1 tbsp of ground flax seed
and 3 tbsp of water instead of 1 egg, the directions on how to substitute for an egg are on the back of the flax seed package)
- 2 cups of whole wheat flour
- 1 or 2 Tablespoons of cinnamon
- 1 ¾ cups of milk (add more to make it thinner)
- ½ cup of oil (I use canola or coconut)
- 4 tsp of baking powder (I find that I only need 7 tsp when I quadruple the recipe)
- 1/2 tsp of salt
Mix all the ingredients together, add a 1/3 of a cup (or so) into a heated waffle iron) Heat until the green light comes on, take it out and serve with maple syrup!
